Beef in Black Bean Sauce
Mum's House
Black beans are salted and fermented soya beans. They make a very versatile sauce and here they are combined with red peppers in a popular restaurant dish.

Ingridents:
* 340g Beef (rump, fillet or topside cut into 1/2 cm slices across the grain)
* 1 Tbsp Chinese cooking wine or dry sherry (optional)
* 1 tsp sesame oil
* 2 tsp light soya sauce
* 1 large or 2 small red peppers (sliced)
* 2 spring onions (3cm lengths)
* 1 tsp minced garlic paste (or use fresh)
* 1 jar Black Bean Sauce
* 2 Tbsp peanut or vegetable oil
Steps:
1. Marinade the meat with 1 teaspoon each of sesame oil, wine or sherry, soya sauce and some black pepper. Allow to marinate for 20 minutes.
2. Heat some oil in a wok and fry minced garlic.
3. Turn up heat and add sliced beef.
4. Next add sliced peppers, the bottom half of the spring onions and the Black Bean Sauce.
5. Before removing from the heat stir in the spring onion tops.
