Spicy Pork on Flat Rice Noodles
Mum's House
Flat rice noodles make a nice change as it is a noodle that is suitable for people with a gluten intolerance. We like the contrast in colours in this dish. Do remember to wash the leeks well and do not discard all of the green tops.

Ingridents:
* 142g flat rice noodles
* 1 tsp minced ginger (or fresh)
* 1 Tbsp light soya sauce
* 1 Jar Spicy Szechuan Bean Sauce
* 170g lean pork (sliced and seasoned with a little light soy, sesame & pepper)
* 1/2 leek (slice lengthways into 1/2cm x 10cm ribbons)
* 1 red chilli (sliced on the slant)
* 3 spring onions
* 1 tsp minced garlic paste (or fresh)
* 4 Tbsp peanut or vegetable oil
Steps:
1. Soak rice noodles in tepid water for 10 minutes. Drain and keep aside.
2. Heat half oil allowance in a wok and fry minced garlic.
3. Quickly add rice noodles and light soy. Stir with a spatula, lifting the noodles gently from the bottom of the pan and turning them over.
4. Add washed leeks and continue stir fying gently for approximately 4 minutes. You might have to sprinkle a little water into the wok to prevent sticking. Remove and keep warm.
5. Now heat rest of oil in a wok or flat bottomed pan. You may cook this simultaneously with noodles!
6. Stirfy sliced onions and minced garlic, then sliced pork. When pork is cooked add Spicy Szechuan Bean Sauce and chillies.
7. Place noodles onto platter or individual plates and spoon spicy pork on top, Garnish with chopped spring onions.
