Tofu in Hoi Sin Sauce with Toasted Sesame Seeds
Mum's House
Hoisin Sauce is made from soya beans, vinegar, plum sauce and other flavourings. It is sweet and spicy and the flavours combined with toasted sesame seeds complement this simple vegetarian dish.

Ingridents:
* 1 packet firm or Organic Tofu (cut into 4 and 4 again)
* 2 spring onions (cut into 3cm lengths)
* 1 tsp minced garlic paste (or fresh)
* 1 tsp minced ginger (or fresh)
* 1/2 jar Hoi Sin Sauce
* 2 Tbsp water
* 1 Tbsp toasted sesame seeds
* 475ml (2 cups) peanut oil
Steps:
1. Toast sesame seeds until a light golden brown in a dry non stick pan. Do not allow to burn.
2. Dice the tofu and place onto clean kitchen paper to dry.
3. Heat oil in a wok and fry tofu in batches until light brown. Drain and keep warm
4. Our out oil, keeping 2 Tbsp and lightly fry minced ginger and garlic.
5. Add Wing Yip Hoi Sin Sauce, white spring onion bottoms and water and bring to the boil.
6. Then add tofu and spring onion tops. Do not stir tofu too much or it will break up.
7. Transfer to a warm platter and scatter with toasted sesame seeds.
